How to tell if the desired sharpening angle has been reached?
Use the marker method to check the success of the grinding process. Draw the felt tip of a marker pen along the entire knife edge, so that it leaves ink on both sides. Once the ink is removed by grinding on both sides, the desired angle is achieved.
How long do I have to sharpen the blade before my knife is sharp?
The first sharpen takes five minutes, on average. The edge must first acquire the chosen 15° or 20° grinding angle. However, thanks to the constant grinding angle, only a few rolls back and forth are needed for subsequent resharpening.
Should I sharpen my knife at 15° or 20°?
Kitchen knives of any quality should work well at 20°. You can try 15° if you want a finer edge however, results may vary depending on steel quality & condition. If 15° isn’t satisfactory after sharpening your knife for 5 minutes, switch to 20°.
What if my knife has a grinding angle other than 15° or 20°?

What's the best way to clean my board?

Dry upright after washing and apply food safe mineral oil to keep the wood hydrated once per month or when the board looks dry or dull. Buff on a layer of beeswax or board conditioner after oiling to shield your board from moisture.
