How to Strop

The green side sharpens a dull knife & the leather side further polishes the edge, giving you a mirror finish. If you aren't getting the desired sharpness after stropping we recommend using our rolling sharpener first.

1. Set the knife edge on the KOYO green side at the desired sharpening angle (guideline: 15 degrees for Japanese knives, 20 degrees for Western knives).

2. Drag the knife edge across the green surface in the direction of the back of the knife. Repeat on both sides.

3. Wipe any green residue off your knife with a soft cloth.

4. Flip the strop so the leather side is face up (note: the green face may leave marks so put something underneath to protect your surface).

5. Repeat steps 1 & 2 to further polish, deburr & improve sharpness.
